Add a pinch of salt & pepper to both partridge breasts.
Heat the frying pan adding the olive oil, garlic & rosemary & place the partridge breast into the pan, skin side down. Cook for 4 minutes each side, then remove the partridge from the pan & allow it to rest for 2 minutes.
Cut the grapefruit into segments.
Heat a frying pan and add a small amount of butter, when it is very hot add the grapefruit segments, cooking for 1 minute each side until it caramalises. Remove from the heat & serve.
To make the pickled cabbage
Into a saucepan add the white wine vinegar, water, peppercorns & bay leaf and bring it to the boil until the sugar disolves. Then remove from the heat and allow it to cool. Add the red cabbage to the saucepan when it is luke warm.
