Valdespino is one of the oldest Bodegas in Jerez going back to 1264....I should imagine they have got the hang of it by now! The Manzanilla is dry and fresh with a saline finish. The Fino is the only Fino fermented in oak barrels and is beautifully dry and finally the PX is dark and sweet and will go beautifully with a sticky toffee pudding or something similar.
