The Pheasant forms part of the 2,000 acre Kelling Estate which sits in an Area of Outstanding Natural Beauty. The Kelling Estate is set between the Georgian town of Holt to the South, the Coast and Muckleburgh Hill to the North with Kelling Heath and Salthouse Heath (Sites of Special Scientific Interest) to the East and West.
Pretty Kelling village is 1km from the coast. The coastline at Kelling, along with Weybourne and Salthouse was part of the strategic defence during the Second World War.
The Estate, has been owned by my family, the Widdowsons, since 2008. It is a diversified business including The Pheasant, woodlands, holiday lets, long term residential lets, commercial lets, horse breeding, as well as the land being used for growing potatoes, parsnips, barley, sugar beet, peas and oil seed rape.
The Pheasant menus are seasonal and wherever possible it starts in the field and gardens.
Our Pheasant, partridge and vension dishes very much have an 'Estate to Fork' ethos.
Our honey, served at breakfast is from the Kelling bee hives and the damsons, raspberries and strawberries are picked by the Kelling gardeners (or my mother) and the same day are delivered to our pastry chef to be made into jam.
During the summer months the ingredients for our soups are, wherever possible, the vegetables grown in my parents walled garden. Nothing pleases our chefs more than a crate of freshly picked vegetables.
